🥙 Roasted Veggie + Garbanzo Bean Flatbread Pizzas

An easy, high-fiber dinner that’s family-approved and full of flavor

There’s something magical about flatbread pizza night. It’s casual, customizable, and just fancy enough to feel like a treat. These roasted veggie + garbanzo bean flatbreads have quickly become a staple in our house—packed with flavor, fiber, and just the right amount of crunch.

  • No meat, no problem — it’s satisfying and hearty without it

🍅 Ingredients:

  • Flatbreads (store-bought or homemade—Naan, pita, or whole grain all work)
  • Roasted veggies (I used zucchini, red bell pepper, broccoli, and red onion)
  • 1 can garbanzo beans (drained, rinsed, and lightly roasted or seasoned)
  • Store-bought pesto or marinara
  • Shredded mozzarella or dairy-free cheese (optional)
  • Crumbled Feta (optional)
  • Olive oil, salt, pepper, garlic powder (for roasting)

🔥 Directions:

  1. Prep your veggies: Chop and toss with olive oil, salt, pepper, and garlic powder. Roast at 425°F for about 20 minutes until golden.
  2. Roast your chickpeas (optional but so good!): Toss with olive oil, salt, and paprika and roast alongside the veggies.
  3. Assemble flatbreads: Spread a layer of pesto or marinara on each flatbread, then top with roasted veggies and garbanzo beans. Add cheese if using.
  4. Bake at 400°F for 8–10 minutes or until edges are crisp and cheese is bubbly.
  5. Serve warm, maybe with a side of fruit or a simple green salad.
