Vegetarian King Ranch Casserole

A creamy, cheesy Texas comfort-food classic made vegetarian with black beans, corn, and green chiles.

If you grew up in Texas, chances are you’ve had King Ranch Casserole at potlucks, church dinners, or family gatherings. This vegetarian version keeps all the creamy, cheesy comfort of the original while swapping the chicken for hearty black beans and sweet corn.

It’s easy enough for a weeknight and comforting enough to earn a permanent spot in your dinner rotation.


Ingredients

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (10-ounce) can Rotel
  • 1 (4-ounce) can diced green chiles
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 (10.5-ounce) can cream of mushroom soup
  • ½ cup sour cream
  • ½ cup milk
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • 10–12 corn tortillas, torn into pieces
  • 2 cups shredded Mexican-blend cheese
  • cilantro, avocado, or jalapeños for serving (optional)

Instructions

Step 1: Prep the Filling

Preheat oven to 350°F.

Heat olive oil in a large skillet over medium heat.

Add onion and bell pepper and cook until softened, about 5–6 minutes.

Stir in garlic and cook for another 30 seconds.

Add Rotel, green chiles, black beans, corn, chili powder, cumin, paprika, and salt.

Cook for 2–3 minutes until warmed through.


Step 2: Make the Sauce

In a medium bowl, whisk together:

  • cream of mushroom soup
  • sour cream
  • milk

Stir half of the sauce into the vegetable mixture.


Step 3: Assemble

Lightly grease a 9×13 baking dish.

Layer:

  • Half the torn tortillas
  • Half the bean mixture
  • Half the remaining sauce
  • 1 cup cheese

Repeat layers.

Top with remaining cheese.


Step 4: Bake

Bake uncovered for 30–35 minutes, until bubbly and golden around the edges.

Let rest 10 minutes before serving.
